I love fish when it is cooked just perfect, not dried out. Fish is so easy to cook, so good for you. Tilapia is a nice white fish that lends well to many different preparations. A light tasking fish that is not very 'fishy'. I made this dish last week and we all loved the combination of tomatoes, garlic, scallions and seasonings.
Baked Tilapia with Tomato topping
4 Tilapia filets
2 medium tomatoes, coarsely chopped, seeds removed
3 scallions, slice thinly
1 garlic clove, minced
1 teaspoon Penzey's Northwest seasoning or any other good fish seasoning
1 Tablespoon of olive or non stick spray
Place tilapia in baking dish. Mix tomatoes, scallions, garlic and seasoning, place on top of fish. Drizzle with olive oil or spray with non stick cooking spray. Bake 20 minutes at 375 F.
