I learned at a young age how to handle and prepare poultry from my mother, an outstanding cook - her turkey is far superior to any that I have tasted. My mother taught me to soak turkey over night in a bath of salt to tender and remove harmful bacteria. First my mother would freeze a fresh turkey, she believes it seals in the flavor. Then time to soak the frozen turkey over night. Next through rinsing, draining and patting dry of the bird. I love rituals so my mothers holds a special pace in my turkey preparation. I've bought fresh turkey from the farm, from high end and frozen from lower end grocery store. My only hard fast rule is all natural. How you dress and cook the turkey plays an import part in how good your turkey taste. Mediterranean Stuffed Pepper with Turkey, Orzo and Feta Cheese Peppers 6 peppers, 2 red, 2 yellow and 2 orange 1 cup orzo, cooked according to package instructions, cooled 1 lb. ground turkey 1 cup mozzarella 1/4 cup crumbled feta cheese 1/2 cup kalamata olives, chopped 1/2 teaspoon oregano 1/2 teaspoon mint 1/2 teaspoon dill 1/2 teaspoon allspice 1/2 teaspoon cinnamon 1 clove garlic, chopped 1 tablespoon fresh lemon juice 1 teaspoon zest of lemon 1 1/2 teapsoon salt 1/2 teaspoon pepper Sauce 2 tablespoon olive oil 2 cloves garlic, minced 1/2 teaspoon oregano 1/4 teaspoon crushed red pepper 1 teaspoon salt 1 can(14.5 oz) petite chopped tomatoes, I use Hunt's no salt added 2 tablespoon parmesan cheese Preheat oven to 350F. Chipotle Turkey Chili

After Thanksgiving I use the leftover turkey to make a big batch of this hot Chili freezing in individual containers to enjoy during the busy holiday season. After a long day of baking and preparing for Christmas I can sit back, relax, serving this delicious Chili for dinner. If you don't want it really hot substitute 1 chopped jalapeno pepper for the chipotle pepper in adobo sauce, just as good but with out the kick!
