Air Fryer Sweet Potato Fries

Last year I purchased a Philips Air Fryer and since then I've enjoyed creating recipes specifically for the air fryer. I love sweet potato fries and adapted a recipe for the air fryer. These sweet potato fries are healthy, spicy and tasty.    INGREDIENTS: 3 medium peeled sweet potatoes   2 tablespoon olive oil 1   tsp sea salt 2 cloves crushed garlic 1/2 teaspoon hot paprika 1/4 teaspoon crushed red pepper 1 teaspoon thyme 1/2 teaspoon pink Himalayan sea salt DIRECTIONS: Preheat air fryer to 400°F 8 minutes. Lightly spray the fryer basket with oil. Slice each potato into even 1/4 inch thick fries. Toss with oil, salt, garlic, paprika and red pepper. Cook in 3 or 4 batches, without overcrowding the pan 8 minutes, turning half way. Place on serving plate and top with pink Himalayan sea salt. Enjoy!

SPRINGTIME FETTUCCINI WITH CREAM SAUCE AND ASPARAGUS

I use Bruitoni pasta when I want the taste of fresh pasta but don't have time to go to a speciality store or make the pasta at home. And I love this easy cream cheese pasta sauce for a quick weekend, taste delicious dinner. Don't you just love the bright green asparagus? Lemon and asparagus the perfect springtime combination to add to pasta, so flavorful! Ingredients 9 oz. Bruitoni Fettuccini 1/2 cup cream cheese 2 Tbs. olive oil 1 lemon, juiced and 1 Tbs. zest grated 1/2 cup fresh parmesan cheese 1/2 - 3/4 cup steamed asparagus, lightly steamed Preparation 1. Cook linguine according to package directions in pot of boiling salted water. 2. Warm cream cheese, oil, and 2 Tbs. lemon juice in saucepan over low heat. 3. Drain pasta, reserving 1/2 cup cooking water. Stir reserved cooking water into cream cheese mixture. Add pasta, lemon zest, and parmesan cheese; toss to coat. Add asparagus and lightly toss again. Pancakes and blueberries; sunshine meets the earth: My favorite pancake combination. Making pancake batter, not using a mix is so easy and quick. I like to make home made for freshness and also I can control salt and sugar in my diet. I have also added a vegan option which taste just as delicious.  2 large eggs 1 1/4 cup milk* 3 tablespoon melted butter or vegetable oil* 1 1/2 cup King Arthur unbleached flour 3/4 teaspoon salt 2 teaspoon baking powder 2 tablespoon sugar  Blueberries Beat the eggs and milk until light and foamy, about 3 minutes at high speed of a stand or hand mixer. Stir in the butter or vegetable oil. Whisk the dry ingredients together to evenly distribute the salt, baking powder and sugar. Gently and quickly mix into the egg and milk mixture. No time to cook shouldn't be an excuse not to have deliciously easy meal every night. With a little planning you can have a wonderful meal in thirty minutes. And marinating the pork chops over night infuses extra flavor and tenderness. This recipe is easily doubled to feed four. Add a fresh salad, crusty bread for a wonderfully tasty quick meal that is short on time and long on flavor. Roasted Pork Loin Chop White Beans for Two 2 thick Pork Loin chops 4 tablespoon olive oil 2 tablespoon fresh lemon juice 2 cloves chopped garlic 1 tablespoon crushed rosemary 1 teaspoon sweet paprika 1/2 teaspoon fresh ground pepper  1/2 teaspoon kosher salt 1 can(15.5 oz) cannellini beans, rinsed Place pork chops in leak proof plastic bag. I love this flavorful vegetable soup that is filling yet very healthy. Make and freeze in individual serving sizes for a deliciously easy soup. I added a Parmesan cheese rind for added flavor that is your option. If you want a strictly vegan soup omit the cheese. I love the french recipe Coques St. Jacques which I bake and serve in beautiful scallop shells. The traditional recipe has many steps and requires time to make. Loving Scallops cooked in a casserole but not always have the time to prepare I created this easy baked scallops for a delicious weekday meal.  Prepare the casserole in the morning to bake at night having a wonderful fresh dinner in 20 minutes. Ingredients 1/2 lb sea scallops 1/2 lemon 1 tablespoon olive oil 2 cloves minced garlic 1/4 teaspoon pepper 1/2 teaspoon sea salt 1/2 cup Italian Panko bread crumbs, I used Roland 1/4 cup Parmesan cheese 2 tablespoon butter Preheat over to 375F. I love experiment with different ideas to create new recipes.  Since I learned to cook at a young age from my mother I developed like most experienced cooks the ability to create dishes that not only taste delicious but fill that need for putting a meal on the table quickly. I believe that if you are going to eat food should taste wonderful inviting you to sit down even on a week night for a tasty meal with you family. My Mexican Chicken Parmesan is deliciously easy taking about 45 minutes from start to setting the meal on the table! Perfect during the busy Holiday Season. Grilled Scallops with Fresh Tomatoes and Basil       Quick and easy delicious meals are a summer staple in our house. No clean up just heat up the grill. Grilling scallops brings out the sweet taste of the sea. All I do is marinate the scallops for a half an hour to enhance the flavor, pick fresh cherry tomatoes, add just snipped basil, so easy, so good. Toss up a salad with fresh farm produce serve along with a wonderfully fresh loaf of artisan bread for the best of summer dinning, so easy, so good.
