Cranberry Pumpkin Bread

Cranberry Pumpkin Bread INGREDIENTS 3 cups sugar 1 cup vegetable oil 3 large eggs 1 16-ounce can solid pack pumpkin 3 cups all purpose flour 1 teaspoon ground cloves 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon baking powder 2 cup fresh cranberries Preheat oven to 350°F. Butter and flour two 9x5x3-inch loaf pans. Beat sugar and oil in large bowl to blend. Mix in eggs and pumpkin. Sift flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder into another large bowl. Stir into pumpkin mixture in 2 additions. Mix in cranberries. Divide batter equally between prepared pans. Bake until tester inserted into center comes out clean, about 1 hour 10 minutes. Transfer to racks and cool 10 minutes. Using sharp knife, cut around edge of loaves. Turn loaves out onto racks and cool completely.

Loaf breads or Tea bread whatever you call these delectable sweet breads are simply delicious and easy to make. Prefect for a beginning baker or to make when you are short of time. You can also make and freeze to eat later. Smaller loafs are perfect little treats to give as gift during the holidays wrapped up in cellophane tied with a festive ribbon. I love pumpkin bread anytime of the year but especially around Thanksgiving. For me baking isn't only about the taste but about the heavenly cooking aromas filling my home with sweet scents. Chocolate Chip Pumpkin Coffee Cake

I love this cake because it combines the wonderful taste of chocolate and pumpkin. What makes it even more delicious is the wonderful spices added to the batter. This cake not only taste great but smells like spiced hot chocolate.   I love a pretty presentation for my cooking and baking and by adding the mini chocolate chips and powered sugar not only does that enhance the taste but also adds a nice visual presentation. You can do more to this cake to dress it up.  I sometimes decorate the cake with chocolate dipped strawberries or dried apricots, both are very easy to do. I just place the fruit around the base of the cake on the cake dish. This is very nice for a buffet table. As I like to say just use your imagination and try different ideas. Remember no fear, just enjoy. I've included the recipe for chocolate dipped fruit.
