Guacamole so deliciously easy to make why buy when you can make fresh. I like this simple recipe that has just the right blend of spice with a kick from fresh jalapeno pepper. If you like more heat add more jalapeno pepper. Guacamole 3 has avocados, halved, seeded and peeled 1 lime, juiced 1/2 teaspoon kosher salt 1/2 teaspoon ground cumin 1/2 teaspoon cayenne 1 bunch scallions, diced 1 jalapeno pepper, seeded and minced 1/2 cup cherry tomatoes, seeded and diced 1 tablespoon chopped cilantro 1 clove garlic, minced Directions In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, cilantro, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.  Enjoy! www.g...

Spicy Edamame

I love edamame enjoying steamed with just a little sea salt. So good and healthy For a change I like to spice up Edamame with this hot sauce. If you want it with less heat use only one tablespoon Sriracha Hot Chili Sauce and three tablespoon low sodium soy sauce. Either way a deliciously tasty snack perfect for game day! Spicy Edamame   Ingredients: 16 Ounces Steamed Edamame 2 Tablespoons Sriracha Hot Chili Sauce 2 Tablespoons Low Sodium Soy Sauce Garnish: Coarse Sea Salt   Cook Edamame according to package instructions. Place in medium combine. Mix hot chili sauce, and soy sauce and toss with Edamame. Sprinkle with Coarse Sea Salt. Serve warm or at room temperature. Enjoy!

I love experiment with different ideas to create new recipes.  Since I learned to cook at a young age from my mother I developed like most experienced cooks the ability to create dishes that not only taste delicious but fill that need for putting a meal on the table quickly. I believe that if you are going to eat food should taste wonderful inviting you to sit down even on a week night for a tasty meal with you family. After Thanksgiving I use the leftover turkey to make a big batch of this hot Chili freezing in individual containers to enjoy during the busy holiday season. After a long day of baking and preparing for Christmas I can sit back, relax, serving this delicious Chili for dinner. If you don't want it really hot substitute 1 chopped jalapeno pepper for the chipotle pepper in adobo sauce, just as good but with out the kick!
